Tenuta di Tavignano’s cellar is the place where the secrets of the vinification process are safeguarded. It is a modern structure, dug underground to keep the natural temperature under control by resorting to the use of energy as little as possible. Rebuilt and enlarged ex novo in 2005, it is equipped with new tanks that have different capacities: 25, 50, 75, 100 until reaching a maximum of 150 hectolitres. Its size has in fact been doubled, and today it has a surface area of 500 square metres. The barrique cellar is located in the manor house, on the ground floor and basement, and it has French oak barriques and large oak barrels made of Slavonian oak, with dimensions from 15 to 25 hectolitres. The operations of the cellar are oriented at preserving the original characteristics of the grapes. The vinification of the white wines is carried out with soft pressing of the grapes for the extraction of the grape must, while fermentation takes place at a controlled temperature.
To ensure the maintenance of the nature of the wine, the Tenuta privileges stainless steel containers for the maturation on fine lees for all white and rosé wines. No white wine of the Tenuta has maceration carried out on the skins, except for “Le Vergine” of the I Love Monsters line. The red wines are produced through long fermentations in contact with the skins, malolactic fermentation for almost all labels of the range and refinement in barriques and barrels of 2nd and 3rd passage.
