Description
According to the historian Pliny, the ancient Egyptians and Greeks identified wine with the geographical area of production, which his contemporaries indicated in the “Pittacum” or in the “Tesserae”. On this ancient conception are founded the so-called “historical” Designations of Origin: the Piceno, that is the geographical area, is still identified today with the wine Rosso Piceno. On the other hand, there’s a theory according which “the genius of wine lies in the grape variety”: it’s no coincidence that the two largest black grape varieties in central Italy, Sangiovese and Montepulciano, are present in Piceno.
Cervidoni presents itself at sight in a shining ruby color with violet hints. On the nose it’s fruity, it reminds cherries’ jam and a light spiciness. In the mouth it’s savory, well-balanced in tannins and alcohol and it presents a great persistence on ripen fruits. To be paired with giblets, grilled poultry, roasted rabbit, medium-aged cheeses.
